Rekonstrukcje menonickich specjałów

Abstract

The authors of the article present activities the aim of which is to look for Mennonite tastes following the phenomenon of the fashion for the so called traditional, regional or even historical cuisine. They demonstrate selected activities promoting the Mennonite cuisine, which constitute distinctive practices of its creation nowadays. The subject matter of the analysis is the creation of the Mennonite village, the Mennonite cookery book, the Mennonite weekend or the Mennonite culinary tract. The authors show also how given manufactured products become “Mennonite” and present the manner in which they are presented as such. The examples collected and the theses outlined here are the result of many years of ethnographic research conducted in the Lower Vistula Valley. The authors of the text carry out field research, which requires active participation, working in groups and animation. Many conversations, activities and observations help the authors to reconstruct the elements of the initiative and efforts to identify and restore the Mennonite cuisine of the Lower Vistula Valley.

Autorzy artykułu przedstawiają działania, składające się na rodzaj poszukiwania menonickich smaków i wpisujące się w szersze zjawisko mody na tzw. kuchnię tradycyjną, regionalną, a nawet kuchnię historyczną. Pokazują wybrane aktywności, mające na celu promowanie menonickiej kuchni i stanowiące tym samym specyficzne praktyki jej współczesnego kreowania. Przedmiotem analizy staje się tworzenie menonickiej wioski, menonickiej książki kucharskiej, menonickiego weekendu czy menonickiego szlaku kulinarnego. Pokazują także jak dane produkty czy przetwory wchodzą w obręb pewnej menonickości i zostają jako takie zaprezentowane. Zgromadzone przykłady i zarysowane tezy są wynikiem wieloletnich badań etnograficznych realizowanych w Dolinie Dolnej Wisły. Autorzy tekstu prowadzą badania terenowe, w których pożądane są aktywność, uczestnictwo, działania wspólne i animacyjne. Z wielu wspólnych rozmów, działań i obserwacji autorzy rekonstruują na potrzeby tego artykułu te elementy inicjatyw, wieloletnich starań i pracy, które składają się na produkt jakim jest kuchnia menonicka na terenie Doliny Dolnej Wisły.
